The update of the Apple Watch can no longer raise the heart rate too regularly. Apple says that this change is intentional.

The first Apple Watch firmware update arrived this week. If it has improved the responsiveness of the watch, it nevertheless caused a malfunction in the heart rate data record. Several sites, including 9to5Mac have indeed reported this concern.
Originally, before the arrival of the 1.0.1 version of OS Watch, the system of the watch recording the heart rate was determined in every 10 minutes. Since the update, it is not at all the case. Some users even claim that the display time of the heart rate is sometimes more than three hours. However, during physical activities and provided with applications for that, the sensor operates quite normally.
Apple just clarify this story explaining that this is actually an intentional modification. Thus, when the wearer of the watch which moves the arm is attached to the watch, it does not take care to raise the heart rate consistently. The latter, however, remains measured in the rest condition every ten minutes. Similarly Apple says that it remains possible to make a statement manually. However, this change suggests that Apple wanted to increase the autonomy of the shows that way.
